Ingredients
  

  • 1 sheet puff pastry thawed if frozen
  • 4 oz Brie cheese mild, soft variety
  • 4 fresh figs ripe and jammy
  • 1 egg egg beaten for egg wash
  • 1 tbsp honey optional, for drizzling

Method
 

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Unfold the puff pastry sheet onto a lightly floured surface and use a sharp knife to cut it into 12 small squares, roughly 2 inches each.
  3. Thinly slice the Brie cheese into small pieces or strips, enough to place a small amount on each pastry square.
  4. Wash and thinly slice the figs into rounds, removing stems as needed.
  5. Place each pastry square on the prepared baking sheet and dollop a small piece of Brie in the center of each.
  6. Top each Brie-topped pastry with a slice of fig, pressing gently to secure.
  7. Use a pastry brush to lightly brush the edges of each square with beaten egg, giving a shiny, golden finish once baked.
  8. Bake in the preheated oven for 12-15 minutes, until the pastry is golden and puffed, and the Brie is starting to melt and bubble.
  9. Remove the baking sheet from the oven and let the bites cool for 5 minutes; the cheese will be gooey and the pastry crisp.
  10. If desired, drizzle a small amount of honey over the bites for an extra touch of sweetness.
  11. Serve the Brie and Fig Bites warm or at room temperature for a perfect bite-sized snack with a burst of flavor and texture.
