Ingredients

  • 1 pint cherry tomatoes ripe and firm
  • 8 oz fresh mozzarella soft and creamy, cut into small cubes
  • 1/2 cup fresh basil leaves whole leaves
  • 1/4 cup extra virgin olive oil for basil oil
  • 1 tablespoon lemon juice freshly squeezed
  • to taste sea salt for seasoning
  • optional balsamic glaze for drizzle

Equipment

  • Skewers (bamboo or metal)
  • Brush
  • Small bowl
  • Chopping board
  • Knife

Method

  1. Gather all your ingredients and tools so everything is within easy reach before starting.
  2. Chop the fresh basil leaves into small pieces and set aside in a small bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, and a pinch of sea salt to create the basil-infused oil.
  4. Cut the fresh mozzarella into small, bite-sized cubes, ensuring they are roughly the same size for even skewering.
  5. Thread a cherry tomato onto a skewer, followed by a mozzarella cube, then a basil leaf, repeating the pattern until the skewer is full, ending with a tomato.
  6. Once all skewers are assembled, use a brush to generously coat each skewer with the basil oil, giving them a shiny, flavorful finish.
  7. Arrange the skewers on a serving platter and, if desired, drizzle with balsamic glaze for a sweet and tangy contrast.
  8. Serve immediately so the flavors stay fresh and vibrant, or chill briefly for a more melded taste.
