Method
 

  1. Preheat the grill to medium-high heat, until hot and slightly smoky.
  2. Using a sharp knife, cut the zucchini lengthwise into evenly thick slices about 1/4 inch thick.
  3. Brush both sides of the zucchini slices with olive oil and sprinkle with salt and black pepper for seasoning.
  4. Place the zucchini slices directly on the grill grates, arranging them so they don’t overlap.
  5. Grill the zucchini for about 3-4 minutes per side, or until you see char marks and the slices are tender but still hold their shape.
  6. Use tongs to remove the zucchini from the grill and place them on a clean plate or cutting board to cool slightly.
  7. Once cooled enough to handle, stack the slices and cut them into strips or bite-sized pieces, maintaining the charred appearance.
  8. Transfer the chopped zucchini into a large mixing bowl and drizzle with fresh lemon juice and chopped herbs.
  9. Toss everything gently to coat the zucchini evenly with lemon and herbs, allowing flavors to meld for a few minutes.
  10. Taste and adjust the seasoning if needed, adding more salt or lemon juice as desired.
  11. Serve the grilled zucchini salad immediately, garnished with extra herbs if you like.

Notes

Ensure the zucchini slices are not too thin to prevent tearing on the grill. You can add other toppings like crumbled feta or pine nuts for extra flavor.
