Ingredients

  • 4 cups mashed potatoes preferably cooled
  • 2 cloves garlic roasted and minced
  • 2 tablespoons fresh thyme chopped
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper freshly ground

Equipment

  • Large mixing bowl
  • Skillet or frying pan
  • Spatula
  • Plate

Method

  1. Start by placing your cooled mashed potatoes in a large mixing bowl.
  2. Add the roasted garlic, chopped thyme, parsley, salt, and black pepper to the bowl.
  3. Mix everything together thoroughly until the herbs and garlic are evenly distributed throughout the mashed potatoes.
  4. Divide the mixture into four equal portions and gently shape them into round patties with your hands.
  5. Preheat a skillet over medium heat and add a tablespoon of oil or butter.
  6. Carefully place the patties in the skillet and cook for about 4-5 minutes per side, until golden brown and crispy.
  7. Gently flip the patties with a spatula and continue cooking until both sides are crisp and deep golden.
  8. Once crispy, transfer the patties to a plate lined with paper towels to drain any excess oil.
  9. Serve the herbed mashed potato patties warm, garnished with extra herbs if desired.
