Ingredients

  • 1.5 cups roasted salted peanuts preferably unsalted if you want less salt
  • 1 cup semi-sweet chocolate chips high-quality for best shine
  • 2 tbsp unsalted butter or coconut oil for a tropical twist
  • 1 tbsp honey or maple syrup for natural sweetness
  • pinch salt or sea salt flakes for crunch
  • optional add-ins (dried cranberries, shredded coconut) feel free to customize

Equipment

  • Microwave-safe bowl
  • Spatula
  • Spoon or small scoop
  • Parchment paper
  • Baking sheet

Method

  1. Line a baking sheet with parchment paper and set aside.
  2. Pour the chocolate chips and butter into a microwave-safe bowl and microwave in 30-second bursts, stirring each time, until the mixture is smooth and glossy.
  3. Stir in honey or maple syrup and a pinch of salt into the melted chocolate until well combined and shiny.
  4. Fold in the roasted peanuts and any optional add-ins with a spatula, ensuring they are evenly coated with the chocolate mixture.
  5. Using a spoon or small scoop, drop dollops of the mixture onto the prepared parchment paper, pressing down slightly to form small clusters about an inch wide.
  6. Refrigerate the tray for at least 30 minutes until the clusters are firm, shiny, and set.
  7. Once set, peel the clusters from the parchment paper and serve immediately, or store in an airtight container in the fridge for up to a week.

Notes

For added flavor, sprinkle a tiny pinch of sea salt flakes on top before chilling. These clusters are best enjoyed within a week for maximum crunch and flavor.
