Ingredients
  

  • 1 ½ cups pitted Medjool dates soft and sticky
  • ½ cup nuts almonds, toasted
  • ¼ cup shredded unsweetened coconut
  • 1 teaspoon vanilla extract
  • a pinch sea salt

Method
 

  1. Pit the dates if they aren’t already pitted, then measure out 1 ½ cups of chopped dates. Warm them in the microwave for 10 seconds if they’re sticky or hard to process.
  2. Toast the nuts in a dry skillet over medium heat for about 3-4 minutes until they smell fragrant and turn golden. Let them cool slightly before processing.
  3. Place the toasted nuts into your food processor and pulse a few times until coarsely chopped, about 10 seconds. Transfer the chopped nuts to a mixing bowl.
  4. Add the softened dates and vanilla extract into the food processor. Pulse until the mixture sticks together and becomes sticky, about 20-30 seconds. If it’s too dry, add a tiny splash of water and pulse again.
  5. Transfer the date mixture into the bowl with the chopped nuts. Add the shredded coconut and a pinch of sea salt, then use a spatula to thoroughly mix everything until well combined and sticky.
  6. Scoop out about a tablespoon of the mixture and roll it between your palms to form a compact ball. Repeat until all the mixture is used, placing the bites on a parchment-lined baking sheet.
  7. Chill the bites in the fridge for at least 30 minutes until they firm up. This helps them hold their shape and develop a chewy texture.
  8. Once chilled, roll the bites in additional shredded coconut or chopped nuts if desired for extra texture and visual appeal.
  9. Store the bites in an airtight container in the fridge for up to a week or freeze for longer storage. Let them come to room temperature before enjoying.
