Method
 

  1. Preheat your oven to 400°F (200°C). Toss the pumpkin chunks with 1 tablespoon of olive oil, salt, and pepper, then spread them evenly on a baking sheet. Roast for about 20 minutes until they're golden and slightly caramelized.
  2. While the pumpkin roasts, heat a tablespoon of olive oil in a large skillet over medium heat. Add the sliced sausage and cook until crispy around the edges, about 5–7 minutes, stirring occasionally. Transfer the cooked sausage to a plate and set aside.
  3. Place the garlic cloves directly into the hot skillet (no oil needed). Let them char and blister for about 1–2 minutes, pressing gently with a spatula to release their smoky aroma. Remove and discard the garlic cloves once they’re charred.
  4. Add the roasted pumpkin to the skillet with the sausage drippings. Gently stir to combine and cook for another 3–4 minutes until the pumpkin starts to soften and caramelize further, filling your kitchen with a sweet, smoky smell.
  5. Crush the charred garlic cloves and sprinkle the red pepper flakes over the pumpkin and sausage. Stir well so the smoky garlic flavor infuses everything evenly. Season with additional salt and pepper as needed.
  6. Return the crispy sausage to the skillet, mixing all the ingredients together. Cook for an additional 2–3 minutes until everything is heated through and flavors meld, with the pumpkin soft and slightly caramelized, and the sausage crispy and fragrant.
  7. Serve the skillet hot, garnished with a drizzle of olive oil or fresh herbs if desired. The dish presents a rustic, colorful mixture of golden pumpkin, golden-brown sausage, and smoky garlic—perfect for a cozy, satisfying meal.
