  • 1 tablespoon olive oil

Method
 

  1. Heat a large skillet over medium heat and add a tablespoon of olive oil to coat the bottom.
  2. Add the chopped spinach to the skillet and cook, stirring frequently, until wilted and vibrant green, about 2-3 minutes. You should hear a gentle sizzle and see the spinach soften.
  3. Reduce the heat to low and crumble the feta cheese directly over the spinach.
  4. Gently stir the mixture until the feta begins to melt and coat the spinach, creating a slightly creamy texture with soft, wilted leaves, about 2 minutes.
  5. Remove the skillet from heat and season with a pinch of salt and pepper if desired.
  6. Serve the sautéed spinach and feta warm, straight from the skillet, as a quick side or standalone dish.

Notes

Feel free to add crushed red pepper flakes for a spicy kick or a squeeze of lemon for brightness.
