Ingredients
  

  • 5 cups fresh peaches, peeled and sliced ripe and juicy
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 cup unsalted butter, cold and diced
  • pinch of salt

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly butter a baking dish to prevent sticking.
  2. Place the sliced peaches in a large mixing bowl, sprinkle with sugar, cinnamon, and cardamom, then gently toss to coat all the fruit evenly.
  3. Transfer the spiced peaches into the prepared baking dish, spreading them out into an even layer.
  4. In a separate bowl, combine oats, flour, brown sugar, and a pinch of salt. Stir to mix.
  5. Add the cold, diced butter to the dry mixture. Use your fingertips or a pastry cutter to work the butter into the oats mixture until it resembles coarse crumbs.
  6. Sprinkle the crumble topping evenly over the peaches, covering the surface completely.
  7. Bake in the preheated oven for about 40 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
  8. Let the crumble cool slightly for 10 minutes so the juices thicken. Serve warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream if desired.

Feel free to add chopped nuts like pecans or almonds to the crumble topping for extra texture.
