- Preheat your oven to 350°F (175°C) and lightly butter a baking dish to prevent sticking.
- Place the sliced peaches in a large mixing bowl, sprinkle with sugar, cinnamon, and cardamom, then gently toss to coat all the fruit evenly.
- Transfer the spiced peaches into the prepared baking dish, spreading them out into an even layer.
- In a separate bowl, combine oats, flour, brown sugar, and a pinch of salt. Stir to mix.
- Add the cold, diced butter to the dry mixture. Use your fingertips or a pastry cutter to work the butter into the oats mixture until it resembles coarse crumbs.
- Sprinkle the crumble topping evenly over the peaches, covering the surface completely.
- Bake in the preheated oven for about 40 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
- Let the crumble cool slightly for 10 minutes so the juices thicken. Serve warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
