  • 1 baguette fresh baguette sliced into 1/2-inch thick pieces
  • 4 large ripe tomatoes deseeded and chopped
  • 1 cup fresh basil leaves chopped
  • 2 cloves garlic minced
  • 3 tablespoons extra virgin olive oil plus more for drizzling

Method
 

  1. Preheat the oven to 375°F (190°C) and arrange the baguette slices on a baking sheet. Toast in the oven until golden brown and crispy, about 8-10 minutes.
  2. While the bread toasts, combine chopped tomatoes, minced garlic, chopped basil, and a tablespoon of olive oil in a mixing bowl. Stir gently to coat everything well, then season with salt and pepper to taste.
  3. Once the bread slices are toasted, remove them from the oven and let them cool slightly for easy handling.
  4. Using tongs, carefully place the toasted baguette slices on your serving platter.
  5. Top each baguette slice with a generous spoonful of the tomato mixture, spreading it slightly to cover the surface.
  6. Finish by drizzling a little extra olive oil over each crostini and adding a small pinch of salt and pepper if desired.
  7. Serve immediately while the crostini are still crispy and the toppings are fresh.

Notes

For extra flavor, let the tomato mixture sit for 10 minutes to allow the flavors to meld. Feel free to add a sprinkle of grated Parmesan or balsamic reduction as a finishing touch.
