Ingredients

  • 1 1/2 cups all-purpose flour sifted
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 eggs lightly beaten
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup grated zucchini excess moisture squeezed out
  • 1/2 cup grated carrot
  • 1 apple apple peeled and grated

Equipment

  • Mixing bowls
  • Loaf pan
  • Grater
  • Whisk
  • Spatula

Method

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan to prevent sticking.
  2. In a large mixing bowl, whisk together the sifted flour, sugar, cinnamon, baking soda, and salt until well combined. This creates an even dry mixture for the batter.
  3. In a separate bowl, beat the eggs lightly and then stir in the vegetable oil until smooth and blended.
  4. Add the wet mixture to the dry ingredients and gently fold together with a spatula until just combined. Do not overmix, as this helps keep the bread tender.
  5. Stir in the grated zucchini, carrot, and apple, folding gently to evenly distribute the vegetables and fruit throughout the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top with the spatula for an even surface.
  7. Bake in the preheated oven for about 50 minutes, or until a toothpick inserted into the center comes out clean, and the top is golden brown.
  8. Remove the bread from the oven and let it cool in the pan for 10 minutes, allowing the structure to set, then transfer it to a wire rack to cool completely.
  9. Slice the bread once cooled to reveal the moist crumb dotted with bits of grated vegetables and fruit, with a warm cinnamon scent wafting through the air.
  10. Enjoy slices on their own, or spread with a little butter or cream cheese for extra richness.
