Ingredients
  

  • 2 cups old-fashioned oats for chewy texture
  • 1/2 cup honey acts as the binding agent
  • 1/2 cup nut butter peanut, almond, or cashew
  • 1/2 cup chopped nuts to add crunch
  • 1/3 cup dried fruit raisins, apricots, or cranberries
  • 1 teaspoon vanilla extract brightens flavor
  • a pinch salt enhances sweetness

Method
 

  1. Line your 20x20cm (8x8 inch) baking dish with parchment paper for easy removal later.
  2. In a large mixing bowl, pour in the oats, chopped nuts, and dried fruit.
  3. Warm the honey slightly in the microwave for about 10 seconds until it's runny, then add it to the bowl along with the nut butter and vanilla extract.
  4. Using a spatula, fold everything together until the mixture is sticky, well-coated, and starts to clump.
  5. Transfer the mixture into your prepared dish and press down firmly with the spatula or your hands to create an even, compact layer.
  6. Place the dish in the fridge and chill for at least 2 hours until the mixture is firm and set.
  7. Once chilled, lift out the block using the parchment paper and cut into 12 even squares with a sharp knife.
  8. Serve immediately or store in an airtight container in the fridge for up to 5 days, or freeze for longer storage.

Notes

For extra flavor, try adding a sprinkle of cinnamon or a handful of chocolate chips before pressing into the dish.
