  • 1 cup chocolate chips semi-sweet preferred
  • 1/2 cup creamy peanut butter natural or standard
  • 1 tablespoon honey or maple syrup for stickiness and sweetness
  • 1/4 teaspoon salt flaky sea salt preferred
  • 1 teaspoon vanilla extract
  • 2 cups roasted peanuts salted and well toasted

Method
 

  1. Place the chocolate chips and peanut butter in a microwave-safe bowl. Microwave in 30-second bursts, stirring well after each, until the mixture is smooth, glossy, and fully melted.
  2. Add honey or maple syrup, a pinch of salt, and vanilla extract to the melted mixture. Stir until everything is evenly combined and fragrant.
  3. Fold in the roasted peanuts, ensuring they are thoroughly coated with the chocolate mixture. The mixture should become thick and sticky.
  4. Using a spoon or small scoop, drop dollops of the mixture onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  5. Gently press down each cluster if you prefer a flatter shape. Place the tray in the refrigerator and chill for about 30 minutes until they are firm and shiny.
  6. Once set, remove the clusters from the fridge and let sit at room temperature for 5 minutes. Serve and enjoy these rich, nutty treats!
